This is a standby meal for us. I’m mostly writing this down for my reference, but perhaps you will enjoy it too! Please reach out if you do!

The directions are basically:

  • Start cooking the brown rice because it takes a while!
  • Cook and blend the cheese-style sauce
  • Clean and shred/mince everything else
  • Let people build their own bowl

For the tortilla bowls: get the tortillas moist and pliable, then bake them in the oven over a bowl (e.g. Pyrex) until they’re toasted.

Vegan cheese-style sauce

  • 2 parts instant mashed potatoes
  • 1 part canned carrots
  • Onion powder
  • Garlic powder
  • Nutritional yeast
  • Chicken-style seasoning
  • Olive oil (optional)
  • Lemon juice
  • Water / cooking liquid if using fresh

Generally on hand

  • Brown rice
  • Canned black beans
  • Canned corn
  • Taco seasoning for tofu or TVP
  • Salsa
  • Green onions
  • Cilantro

Produce

  • Lettuce
  • Tomato
  • 2 avocados
  • Small red onion

Refrigerated

  • Tofu (if not TVP)
  • Large wheat tortillas

Frozen

  • Frozen mango
