Vegan Taco Bowls Recipe

This is a standby meal for us. I’m mostly writing this down for my reference, but perhaps you will enjoy it too! Please reach out if you do!
The directions are basically:
- Start cooking the brown rice because it takes a while!
- Cook and blend the cheese-style sauce
- Clean and shred/mince everything else
- Let people build their own bowl
For the tortilla bowls: get the tortillas moist and pliable, then bake them in the oven over a bowl (e.g. Pyrex) until they’re toasted.
Vegan cheese-style sauce
- 2 parts instant mashed potatoes
- 1 part canned carrots
- Onion powder
- Garlic powder
- Nutritional yeast
- Chicken-style seasoning
- Olive oil (optional)
- Lemon juice
- Water / cooking liquid if using fresh
Generally on hand
- Brown rice
- Canned black beans
- Canned corn
- Taco seasoning for tofu or TVP
- Salsa
- Green onions
- Cilantro
Produce
- Lettuce
- Tomato
- 2 avocados
- Small red onion
Refrigerated
- Tofu (if not TVP)
- Large wheat tortillas
Frozen
- Frozen mango
